Gnocchi

The world's easiest and best known recipe for a version of pasta is gnocchi! Here is the recipe that my family and I have been making for years!




Ingredients (4 servings):

- 500 g of Potatoes

- 200 g of Flour 00

- 1 Egg

- (as much as needed) salt

- (as much as needed) sauce


Instructions:

1. Take the potatoes, wash and peel them. Cut them into small squares and put them in a medium-sized bowl. Wet them with half a cup of water and mix well. Cover with plastic wrap. Poke a few holes in the surface of the foil and microwave at 750w for about 7 minutes.


2. Remove the bowl from the microwave, remove the foil and mash the potatoes. Place the potatoes on the work surface and spread them out well to cool. Salt the potatoes and meanwhile bring the water to a boil. Prepare the sauce by putting the tomato sauce to cook with the onion and oil.


3. Add the egg to the potato mixture and knead, adding the flour little by little, until a soft and elastic consistency is obtained. Roll out the dough with a rolling pin and cut it into strips. Roll the strips on themselves to form some kind of sausages. Cut the sausages into small pieces to create your gnocchi.


4.Place the gnocchi in boiling water and drain them with a skimmer when they come to the surface. Add them to the pot where you are cooking the sauce and finish cooking, stirring well.

Serve your gnocchi with a generous sprinkling of Grana Padano.


Notes:

If you don't have a microwave available, you can cook the potatoes in a pot for 45 minutes and then mash them later.
