Pasta with Zucchini and Smoked Tofu

An easy, fast and tasty pasta recipe! I invented this recipe last year by using the last things remained in my fridge...I've got to say that the result wasn't bad at all! The main component of this recipe is smoked tofu (which you can easily find in the supermarket).


- 70 gr of integral pasta

- 1 zucchini (small-medium size)

- 70 gr of smoked tofu


  1. Put water inside a pot and bring it to a boil.

  2. Meanwhile, cut a zucchini into cubes and cook it in a pan with a little oil and a pinch of salt.

  3. When you see the water boiling, add a handful of salt to the water and after that add the pasta. Cooking time depends on each type of pasta (on average between 10 and 13 minutes).

  4. While the zucchini is cooking, remember to check them and turn them over so they don't burn. Separately, start cutting the smoked tofu patty into cubes.

  5. When the zucchini is cooked, you will know it by tasting it, add the cubes of smoked tofu to it. Leave everything on a low heat.

  6. Once the pasta is cooked, drain it and then assemble the various components of the recipe together and add a drizzle of oil at the end.
